Bread Sauce

Ingredients

  • 1 white loaf (2nd day), crusts removed
  • 1 litre milk
  • 1 onion, peeled and quartered
  • Generous pinch ground cloves
  • 1 bay leaf
  • Freshly ground white pepper
  • 25 g butter
  • Sea salt

Method

rate the bread until you have a pile of breadcrumbs. In a pan, gently heat milk. Add onion, cloves and bay leaf, season, continue to heat gently, remove from heat and allow to infuse for 1 hour. Strain milk into a clean pan and add the breadcrumbs. Bring to boil over a medium heat. Reduce heat and simmer for 5 minutes. Season and add the butter and a grating of nutmeg to taste. Stir and serve.
